All of the great Domains that inspired us to make wine are fervent believers that great wine begins in the vineyard. As winemakers we are just custodians of that fruit allowing for the reflection of the site, varietal and vintage.  In pursuit of this, Copain has sought out vineyards with expositions, soil compositions, climates, clones and rootstock selections capable of producing wines of distinction and singular character. The selected terroirs we source from are, in our belief, capable of expressing the truest varietal character interwoven with site characteristics and ultimately the vintage nuances.  Further enhancing this expression is our belief in organic farming practices which allows the natural balance of flora and fauna inherent in each site to impact the developing vine, fruit and finally the wine.

Winemaking practices aim to express each sites unique qualities which thereby means a minimum of intervention. Overripe fruit, excessive physical and chemical manipulation of the must and over use of oak, all mask the subtleties provided by the vineyard. The terroirs chosen will be highlighted by keeping alcohol percentages lower, retaining natural vibrant acidity, gently handling the fruit and wine, native yeast ferments and minimal use of new oak. Adhering to these principals will not only allow for the true expression of each vineyard but make for a more compatible and harmonious accompaniment when dining.
