2016 Tous Ensemble Pinot Noir
The 2016 “Tous Ensemble” Pinot Noir, our first offering from Sonoma Coast,presents aromas of rose petals, Santa Rosa plum skins, and fresh raspberries.Ripe cherries and orange peels also present themselves on the palate with asilky texture and lingering finish.
The 2016 growing season had an early start partly due to winter and springrains, which were a welcome reprieve to the drought conditions of 2012-2015.Furthermore, the warm and dry summer also contributed to the early start toharvest. These factors came together to produce a higher yield of fruit.
Staying true to Copain’s philosophy of producing wines that emulate the Frenchstyle of winemaking (lower alcohol, higher acid wines), vineyard were picked onthe early side. This resulted in juice lower sugar levels, typically an average Brix 20.7%.. Additionally, the Pinot Noir grapes are sourced from handpicked lots.
The fruit is destemmed, sorted and dumped into open tops. The grapes comes in cold, and then are warmed naturally over three days before the fermentation
